I knead to know

I'm addicted to bread. If you were to ask me if I'd rather give up chocolate or bread, I'd probably have an easier time giving up chocolate. I enjoy warm, homemade bread and cold milk as much as cookies and milk. I'm not picky about my carbs either. I love wheat bread, white bread, 99 cent store bought bread. Now that I actually learned how to make the stuff, we are going through more loaves a week than ever. I pretend that it's wholesome and good for me sometimes, but the reality is, eating an entire loaf, one lightly toasted, buttered and sprinkled with cinnamon and sugar slice at a time, is in no way healthy, no matter how wheaty the wheat bread. My head knows that at least, but my heart tells me that homemade bread is good for me and my family, that homemade anything is good for us, which leads me to the subject of cinnamon rolls.

Now, I know that if you make rolls with that much butter and sugar already in the dough, then sprinkle more butter and sugar on it, roll it up, bake it, and pour butter and sugar in the form of frosting on top, we are not talking about a healthy recipe. And yet, I just feel good and homemakey when I make them. I would not feel good and homemakey feeding my family a bag of Reeses Peanut Butter Cups for breakfast, but we're probably talking about the same amount of calories and nutritional value. They're not whole wheat cinnamon rolls after all. Does anyone else have this problem? I just don't know what to do about it. Not that I'm at all motivated to change my behavior, just fascinated by the irony of home-baked goods. (As I type with my mouth full.)

I know that my family has a vast knowledge of baking, rolls in particular. I need to know how to make cinnamon rolls that are extra gooey and caramelly on the bottom when you take them out of the oven. Because I love caramel. and bread. The recipe I have (Better Homes & Gardens) makes very yummy, fluffy cinnamon rolls that just aren't quite sweet & sticky enough for me. I'm afraid to just add more butter & sugar because I don't want to have that turn into a burnt sugar mess, so please advise.
