I'm addicted to bread. If you were to ask me if I'd rather give up chocolate or bread, I'd probably have an easier time giving up chocolate. I enjoy warm, homemade bread and cold milk as much as cookies and milk. I'm not picky about my carbs either. I love wheat bread, white bread, 99 cent store bought bread. Now that I actually learned how to make the stuff, we are going through more loaves a week than ever. I pretend that it's wholesome and good for me sometimes, but the reality is, eating an entire loaf, one lightly toasted, buttered and sprinkled with cinnamon and sugar slice at a time, is in no way healthy, no matter how wheaty the wheat bread. My head knows that at least, but my heart tells me that homemade bread is good for me and my family, that homemade anything is good for us, which leads me to the subject of cinnamon rolls.
Now, I know that if you make rolls with that much butter and sugar already in the dough, then sprinkle more butter and sugar on it, roll it up, bake it, and pour butter and sugar in the form of frosting on top, we are not talking about a healthy recipe. And yet, I just feel good and homemakey when I make them. I would not feel good and homemakey feeding my family a bag of Reeses Peanut Butter Cups for breakfast, but we're probably talking about the same amount of calories and nutritional value. They're not whole wheat cinnamon rolls after all. Does anyone else have this problem? I just don't know what to do about it. Not that I'm at all motivated to change my behavior, just fascinated by the irony of home-baked goods. (As I type with my mouth full.)
I know that my family has a vast knowledge of baking, rolls in particular. I need to know how to make cinnamon rolls that are extra gooey and caramelly on the bottom when you take them out of the oven. Because I love caramel. and bread. The recipe I have (Better Homes & Gardens) makes very yummy, fluffy cinnamon rolls that just aren't quite sweet & sticky enough for me. I'm afraid to just add more butter & sugar because I don't want to have that turn into a burnt sugar mess, so please advise.

You need to ask Maury about this. She channels my Grandma Lowe when she makes them and they make the best carmel on the bottom! YUMMY!!!
I have often pondered this very same phenomenon. I'm glad someone else has the same thoughts as I: why do I feel that my greatest act of love toward my family has to be killing them slowly with unhealthy food? Every time I get out the kitchenaid to make rolls I think to myself, "if I'm going to go to all the trouble, I might as well make cinnamon rolls," and so I do! And I never feel one ounce bad about it, cause they're homemade, and anything homemade is good for you - that's just law. It's the love (more than the sugar and fat) that you put in them that is so life-sustaining for your family. I'm certain it counter-balances the negative effects of calories and saturated fats and all that mumbo-jumbo (really, who knows if those exist? If I can't see 'em, they're not there). I just made cinnamon rolls on Monday, and sure as I'm living I'll make them again before the week is through! I'll e-mail you my recipe - I think it's the best recipe ever only because
I despised cinnamon rolls before I tried these, but everyone likes they're cinnamon rolls a certain way, so maybe they won't be "it" for you.
Em, I have no idea about any of this stuff but you are more than welcome to practice your techniques at our house ANYTIME!!!
My favorite treat is bread and butter, so you now have license to blame genetics. Because Dad & I are how happily in our fifties, we now have "bread & spread." The "spread" is most likely "I Can't Believe It's Not Butter" or something like that.
Although I am not a fan of Wal-Mart's "Great Value" brand, I do like their Apple Jelly on warm bread or rolls.
Keep cookin'! See you this weekend!
The caramel on the bottom requires a delicate balance of butter and brown sugar. We'll have to talk. It's not something I can tell you, you must learn by doing. Ohmmmm.
Did you mean "knead" to know? My comment has been eating at me because there's a "they're" that should be a "their", and I just couldn't rest knowing it was sitting here on your blog, uncorrected. Anyway have a fun weekend, but not TOO fun, cause we'll miss you in Rexburg!
I know you are in Indiana right now but can we come up for the weekend and also partake of these rolls? They sound sooo yummy!!! Can't wait!
Maury - I want to learn at your feet. :)
Andrea - knead to know, that's too good!
Jena & David - you are of course welcome any time - I wish there were rolls left over for you!
